Cooking with a slow cooker is an economical way of cooking.</span></p><p><span style="font-family: Indie Flower; font-size: x-large;">I used half the butternut squash, so that will make another meal another day. That’s two meals out of one item. I also added a couple of peppers, mushrooms, a couple of ordinary potatoes, a red onion, garlic, and then, before serving, some cooked frozen peas. I cooked the curry in a tin of coconut milk, which isn’t overly expensive, providing you use the supermarket brand. Altogether, although I haven’t done a price up for this meal, I reckon it wouldn’t cost more than £3.00 to make. £4.00 at the most.</span></p><p><span style="font-family: Indie Flower; font-size: x-large;">This meal will do hubby and I two meals, probably three in one form or another. So, this meal, more or less costs £1.00 a time+ whatever you add as an accompaniment. Now, I’m not anywhere near a climate saving warrior, and I am nowhere near going totally ‘Green’, however, I am becoming aware of even the smallest eco changes I make in certain areas of my life helps, and that is what I’m trying to do. It’s a slow process, and it’s a work in progress.</span></p><p><span style="font-family: Indie Flower; font-size: x-large;">One area where I’m starting the change, (other than cutting down on plastic use with the aim of minimal and unavoidable use) is in my yarn. Sadly, I know acrylic isn’t the best eco wise, but, at the moment I am still using it, but will make sure it gets a full and total usage. I have treated myself, from some birthday money to some re cycled cotton yarn, called re cycle cotton, and I bought that from Amazon. I am amazingly please with it. It knots up well, and it’s very soft. Being aware of the amount of water needed to produce cotton, I was pleased to see this yarn, it does have polyester in it though, so not totally sure on how much eco it is, but I’m on a learning curve, and I don’t want this new life style to become a ‘religion’, so for now, I’m happy with this change. Lots of us in my household have birthdays, including me. This last weekend was busy. I did a BBQ on the Saturday, and a roast dinner on the Sunday. (I went meatless) I made my first ever Victoria Sandwich on the Saturday, following the recipe in the Great British Vegan recipe book by Aimee Ryan. For a first effort I was pleased. It was easy to make and tasted lovely. My brother and his family came for a visit, and he is a Master Baker. It passed his test, so all was good 😊 The only real problem I had was that I didn’t have the right sized tins, mine were too small, so a lovely mess was left on my cooker base 🤪 I now have the right sized tins so I will probably make another one very soon.</span></p><p><span style="font-family: Indie Flower; a little alarming about the fuel rises. I hate the thought of people
having to choose between food or fuel. So not right. Sadly, we live in an
age where there are at least two generations who don’t really know how
to cook, and although all these cooking shows that come on, on the telly
are fun, I think they can put someone off of cooking. Does it really
matter if a pie you make has a soggy bottom?? Maybe for a competition, but
for putting food in yours and your families bellies, then NO!! and, I
can’t help feeling that these shows, where perfection is required, puts
your normal, everyday person off. Who cares if a sponge doesn’t rise as
much as it should? If it tastes ok, then it’s a success. We need more
shows like Delia Smith used to do, and in the early days, Mary Berry,
where they showed us viewers how to cook every day normal stuff. Now,
it’s all fancy, out there stuff, with ingredients that cost the earth,
that a normal family would never cook for a dinner. Now, more than
anytime, we need these celebrity chefs to come on and encourage people
to cook real cheap, wholesome food. Maybe a program where a chef is
given a budget of a normal working class family, who has at least four
children to cater for. Families who can’t afford fancy foods and don’t
have the time to spend hours prepping in their kitchens, because they
are having to work their socks off, just to survive. I know there’s the
Greg Wallace one, and other shows similar, but they fall short on a lot of points, and are somehow unrealistic. However, something is better than nothing I suppose.</span></span></p><p><span style="font-family: Indie Flower; font-size: large;"><span>Supermarkets bug me. I have a real love/hate relationship with them. Food they put on offer is normally rubbish stuff. The good healthy stuff is priced up, so that an average working family, can't afford to buy it, so will opt for something cheaper like pizza, chips, crisps and stuff that can be cooked quickly and easily and is cheap. I feel, most of the time, supermarkets 'dictate' to the customers, and encourage a 'hirearchy' way of shopping. There's food for the rich, and food for the poor.</span></span></p><p><span style="font-family: Indie Flower; font-size: large;"><span>Where I live, we have a centre that is now providing for families who cannot afford to eat. In this place, they have somewhere to go where they and their children, can get at least one decent cooked meal a day. They are also given food that has been donated to take home with them. I find this incredible, that in the 21st century, we are basically still having to provide what was, in times gone by, a 'soup kitchen.' Thankfully, the town where I live are wonderful, and are happy to donate to this cause, and also to the local food banks, but it's so sad that this is happening, and it's worsened, and will get even more worse as the fuel bills rise, and food prices rise. It makes me want to grab hold of some of these politians and fat cat cororate bosses etc, stick them in an inadequate sized house/flat that has to home two adults and more than two children. Give them the wage that is brought into that home and say. "Go on, you show everyone how you can keep warm and fed with this income." Now, that would make a good realltiy program. That one I would watch. Oh! They would also have to do the days work of that family as well. Let them do this for a month, maybe two or three. Challenge them to do six months. Ha!! after a couple of days they would want out, that's for sure. Living in the real world would not suit thier pampered selves!!!!!<br /></span></span></p><p><span style="font-family: Indie Flower; font-size: large;"><span>It is possible to cook quick, nutrious, economical meals. Or if you don't feel like cooking when you get home from work, with a little time spent on prep the night before, if you have one, use your slow cooker. I'm hoping to share in this section some encouragement, and hopefully some tips that will help anyone who reads this.</span></span></p><p><span style="font-family: Indie Flower; font-size: large;"><span>one tip is get hold of some Jack Munroe books if you can, or get onto her website/blog. You will find her very useful.</span></span></p><p><span style="font-family: Indie Flower; font-size: large;"><span>I am an average cook, who, when at school, in the days there were cookery classes, was told by my cookery teacher that she pitied tha man I ever married, if I should be so lucky as to get a husband :-) Well, I did, and ten children followed. I learned to cook, and cook economically, very quickly. My pies did, and do get, and have soggy bottoms. Sometimes my sponges didn't rise. Sometimes the dinners looked horrendous, but, everything, generally tasted good, and that is the main thing. If it tastes good, and fills you up, and doesn't cost a bomb to make, then you've done a stella job.</span></span></p><p><span style="font-family: Indie Flower; font-size: large;"><span>Most of what I share will be plant based. You can always add meat to meals though if meat is your thing. Plant based eating is mainly cheaper though, so maybe a weeks menu can revolve around more plant based meals, and maybe lesser meat based ones.</span></span></p><p><span style="font-family: Indie Flower; font-size: large;"><span>Tonight, I am making a butternut squash curry. As I already had the ingrediants in, and I can't remeber what it cost, I can't do an exact break down cost of this meal. At a guess, all the stuff going into the meal wouldn't have cost more than £4.00. This meal will serve three of us tonight. Hubby will take some into work tomorrow, and I will have some for my lunch tommorw as well, unless there is qute a lot left, I will then turn it into a pasta dinner for Friday night.</span></span></p><p><span style="font-family: Indie Flower; font-size: large;"><span>Going into this meal is butternut squash (obviously) two peppers, onion, garlic, mushrooms, lemon juice, (half a lemon) and the peel (grated) peas, chickpeas (I usually used tinned ones), vegetable stock pot or cube and cocconut milk. The seasoning you can go to town on. Use what you have. I go a bit wild, although I don't like over spicy. I generally put in some tumeric, garam massala, celery salt, ground corriander, ground cummin, ground ginger, curry powder and salt and pepper. I roast my butternut squash which has been peeled and diced. I don't do even sized dicing, so don't feel you have to spend ages getting it all the same size. I roast ths for about 20-30 mins in the oven, I use gas, so the reg. is 6. I want them slightly undercooked as they have to join the rest of the stuff in the wok for a while. I fry the onions, peppers, garlic and mushrooms in the wok, onions on their own for a couple of minutes, or you can cook them on a low heat for longer if you want, then I add the other veg and garlic. I use the one cal oil sprays to fry with, if it looks too dry I put in a splash of boiled water. I then add my stock pot and seasonings and about a quarter of a pint of boiled water. Then the lemon juice and lemon peel, and cocconut milk. Let that heat up on a medium heat in the wok for about five minutes, then add the butternut squash and chick peas. Let it all simmer for another ten mins or so, then add some cooked frozen peas. Tonight I will serve this with some rice. But, it can be served with wedges, chips, or all three :-) You're the boss. You can serve it how you want :-) You can also use sweet potatoes for the curry if you like, or do a mix of squash and sweet pots. Let’s see if I can be a bit more faithful this time :-)<br /></span></span></span></p><p><span style="font-family: Indie Flower; font-size: large;"><span>At the end of this month, all Covid restrictions are going to be lifted here in the UK. A</span></span><span style="font-family: Indie Flower; font-size: large;"><span>lthough, I must admit, I feel pretty much back to normal anyway. I still wear a face covering in the shops. The reason for that is because in July, after a lot of problems getting to see a doctor at her surgery, one of my daughters was diagnosed with blood cancer. Thankfully, she has pulled through, as much as anyone who has experienced cancer can, now it’s the five year waiting game. All looking positive at the moment though. Anyway, just as she was diagnosed, looking at her, you wouldn’t think there was anything wrong with her. At that time, I couldn’t wait to stop having to wear the face coverings, but her diagnosis made me think, I could be stood behind someone in the supermarket, and they could have a life threatening illness, which, if aggravated by catching something like Covid, could become even more serious. So, for now, and for a little while after the restrictions are dropped, I will continue wear a face covering while in shops.</span></span></p><p><span style="font-family: Indie Flower; font-size: large;"><span>I'm thinking of starting a compost bin. I'm hating having to throw stuff away that could become something else. My diet has been plant based for nearly a year now, and it has made think a lot more ethically. I question what I throw away. I know what I choose to do isn't going to 'save the planet' as such, but I do feel, if each and every one of us, do what we can, then it's going to help. I think my body has definitely benifitted from a plant based diet. I don't feel so sluggish, and I look forward to my dinner. It's generally colourful, and very tasty. Having a daughter chef living with me, but sadly only for a while now as she is moving to her own house, has helped give the confidence to be a bit more adventerous with my seasonings etc. </span></span></p><p><span style="font-family: Indie Flower; font-size: large;"><span>I did realsise the other day that socks I made for Christmas for two of my children who are also plant based, had wool in them :-( I have a largeish basket with sock wool in it as well lol. I have to be honest, that I don't feel quite so convicted over wool, but I do realise that in a lot of cases, now-a-days, sheep aren't given the nicest experience when being shorn, and because of man's greed for wool, sheep were bred to be shorn, instead of being left to shed their coat naturally, and of course now, If a sheep isn't shorn, it can make them ill as they can harbour all sorts in their fleeces. I have seen sheep being dipped and shorn, when I was a child. My aunt and uncle and my mum's cousin had farms. I would watch them shear the sheep. Back then it was a lot more humane I think, though I do acknowledge their are still farmers who shear their sheep as gentle as they can. I suppose it's more the mass production etc that puts a sorrowful face on it. I have heard though, farmers can'r sell their fleeces/wool so easy now. ANyway, there are so many other fibre options out there, that I'm going to shift over to ethical/plant based fibers. I will give some of my sock wool away, and knit up socks for my non plant based girls with the rest :-) I'm probably going to start some separate pages to discuss all things plant based and planet friendly. Vegan for me. I did a roasted cauliflower, nut roast, carrots, roast potatoes, cooked some frozen cauliflower and broccoli and tinned marrow fat peas (mainly for my son in law) Yorkshire puds and beef for the non vegan/veggies, and vegetable based gravy. I haven’t learned how to do vegan yorkies yet. I’ve found a recipe online, and I’m planning to do a trial run before doing them as part of the roast. My little grandson would be very disappointed if there wasn’t any yorkies 😊 </span></p><p><span style="font-family: Indie Flower;">The cauliflower roast was taken from Slimming Worlds Curry Club cook book, a little tweaked by me, and the nut roast from Goodtoknow website. Though I’m not sure they still have that particular recipe on it anymore.</span></p><p><span style="font-family: Indie Flower;">The outside leaves of the cauliflower roast were cooked up, now frozen, and will form part of a soup at some time. The cooking liquid saved to cook the potatoes, then the carrots in. It's been a difficult year for everybody I think. During this year, a lot of us I think have learned quite a lot about ourselves. </span></span></p><p><span style="font-size: large;"><span style="font-family: Indie Flower;">When I last posted, I was saying my diet was going mainly plant based. During that first lock down however, where things were out of stock in the supermarkets, we lived mainly on what was in the freezer, and cupboards for several weeks, and so my daughter and myself went back to eating meat. However, we are now back on our mainly plant based diet. We will do vegetarian if need be, Like last week, on holiday in Wales, a place where we went to for lunch had no Vegan options at all, and only two veggie options. Those being a veggie burger, or a cheese, tomato and red onion baguette I opted for the bagutte, with some chips (hopefully they were cooked in vegetable oil !!!) didn't want the veggie burger, as often they are bought one, and they tend to have a bland taste, or a too spicy. Anyway, in that instance, I went veggie. Other than that, my meals are now plant based, and I have to be honest, I'm really enjoying it :-) I'm enjoying cooking the plant based meals as well. Hubby likes them too. He's still a meat eater, but, by default, he's now having a lot less meat meals, and it's doing him good.</span></span></p><p><span style="font-size: large;"><span style="font-family: Indie Flower;">I'm also enjoying doing some vegan baking. When people have had some of my bakes, they've not realised it's vegan. I tell them after :-) so far remarks have been positive. To my face anyway lol. I have realised though, there's a tremendous amount of sugar in the vegan bakes, I suppose this is to compensate for the lack of egg?? So, my next venture is to experiment using natural sugar replacemnets. I'm currently reading up on how to substitue sugar in bakes (thank you Mr. Google) So, when I've perfected the art, I will start posting my efforts :-)</span></span></p><p><span style="font-size: large;"><span style="font-family: Indie Flower;">I'm still busy with my knitting/crochet etc. Also, I had my DNA done last year. I have been busy. I was looking after my little grandson three days a week for nearly three years. Last January he started extra days at his child minder, so I only have him once a week now. this September he starts school!!!! That is unbelievable.<br />

Not a lot has changed with me. I still like my crafts, baking etc. I think the last four years I've mainly knitted for Freddie :-)<br />
I still try to be as economical with my cooking as I can be, and not waste food, though at times I don't do so well. Lately as well, one of my daughter's who lives with us and is a chef, (I have two chef daughters) is embracing a more vegan/vegetarian type diet. As a chef she can't go full vegan/veggie, as she has to taste her cooking, but at home, those are her food choices, veering more towards vegan. I've joined her on this. I will eat meet if we are visiting and meat is served, but where I can have to choice, my food preferences are now more Veggie, as I do eat egg and cheese still. I do try and keep my main meals mainly vegan though. Hubby still eats meat and fish, but he is enjoying a more vegan diet.<br />
Tuesday nights, my daughter does the evening meal, and this last Tuesday she did pulled jackfruit. She wasn't so keen on it, but hubby and I loved it :-)<br />

So we are coming to the end of August. This summer has flown by. Hubby's birthday at the beginning of September and they have the tradition of the birthday person taking in birthday cake.I cannot understand that. Surely it's the person who's birthday it is that should have a cake given to them, but it seems to be the thing in most work places now, it's the birthday person provides the cake. Now. Where most the people hubby works with would bring in a couple of bags of dougnuts, and share them with those who work in their particular section, hubby likes me to make cake, enough to feed the whole factory near enough. So, I make him two white Victoria Sponges, two chocolate ones, a fruit cake and a banana teabread. He did ask for more, but I told him that was plenty. If it didn't go round, cut smaller slices :-) So, today I started on the sponges. Going to make one each day and freeze them. The first of the white sponges has been made and frozen :-)<br />

Actually, I have been quite motivated today, which in all honesty isn't always the case!!! I got up at 6am, squeezed oranges for those in the house. Put dinner on in the slow cooker, made the sponge. Did mine and hubby's laundry, washed the towels, ironed some shirts for hubby. Made him a cuppa. Hubby, mum and I went into Chippenham and did some shopping. Made some cheese scones. vacuumed upstairs, did some knitting, and lots of other little odds and ends, even managed a 20min power nap :-D<br />

Talking of dinner. As I've just said. I did dinner in the slow cooker, getting up early to put it on. I love the slow cooker. Once the food is in it, then you can just get on with the day, and not worry :-) So. In my slow cooker today went a couple of chicken breasts.. Yes. I know a couple of posts back I said I was veggie. I had to stop being completely veggie as I started to feel really weird (my lot here said they hadn't noticed any difference as I'm always weird!!) so I've started to have a little meat in my diet, so I'm more flexitarian, than vegetarian now. I do still cook veggie, and try and do my menus to include more vegetarian recipes than it did before I had my veggie months. I like to have more vegetarian dinners than meat ones in the week. For my lunch time food I try to keep mainly vegetarian as well. Anyway. Today I did chicken breasts. I chopped up some onion and mushrooms, put them in the slow cooker. Placed the chicken breasts on top then poured a tin of chopped tomatoes over them and dried mixed herbs. I had some gravy left over from the roast on Thursday, so added that as well, popped the lid on and then spent a lovely day not worrying about what to cook tonight :-) The result was lovely. I served the breasts with roasted new potatoes, and also re-heated a couple of boiled new potatoes from last nights meal, which was a salad. And we had some mixed veg as well. It was delicious. especially as there were cheese scones to go with it too :-) Yum!!!<br />

Last week was busy as always, though I'm trying to organise myself better. That's an ongoing task, as I never seem to be able to fully accomplish that :-)<br />
My little grandson keeps me on my toes. I really enjoy having him.<br />
I've found I've had to start writing a weekly menu. I always did that when my kiddies were young, and I was homeschooling, but that has slipped over the last few years, and I've been finding myself waking up and wondering what to make for dinner that night, and then having to buy, because it's too late to take anything out of the freezer. I was also noticing I was throwing away more food again, as I wasn't keeping a proper eye on the fridge's inners. It always amazes me how easy it is to fall back into bad ways and habits. For me, it's an ongoing mission to stay focused, and economical.<br />
I tidied out our freezers on Thursday. That has helped a lot actually. It's good to know what there is. I wrote down stuff so I can keep an eye on it and use it up. I stopped counting the frozen bananas. There were tons. So lots of banana teabreads to be made !!!! Also, frozen cooked veg for soup. I've a lot of that, so Friday I made some soup and still have some in the fridge. We will have some tomorrow for lunch. I also have a few cartons of frozen casseroles that were left overs from a meal. So tomorrow for dinner I'm making a pie also using some frozen pastry scraps from precious pies, so a nice easy meal tomorrow that will be wholesome, but not hard work :-) We will have that with wedges and peas :-) Also, there was some lovely onion, mushroom, tomatoey gravy left from today's meal, so that will be lovely to have with the pie :-)<br />

I am busy knitting socks. I'm on my last pair now for a while. I want to start some sweaters for Freddie ready for the Autumn/winter. I'm determined to cut down the time I spend on my tablet playing games!!!! I get so cross with myself for getting so involved and wasting time. I need to get a knitting move on lol. So. I'm going to limit my tablet time, and only play a couple of the games like. It will be interesting to see how I do when I get back on here. Hopefully I'll be able to report a success :-)<br />
