Tonight’s butternut squash curry, I did end up adding a stick of celery and a spring onion, as I had them lurking about in the fridge, and it’s amazing how much extra flavour those two ingredients can add. It was very yummy, and economical to make, there’s a fair bit left over, so I will add it to some pasta on Friday for dinner with the little bit of stir fry left over from yesterday. Odd mixture, I know, but I don’t like waste, and it tastes good, which is what it’s all about, and in a weird way, it’s sort of a free meal 😊
